Before we hit the fall season, I wanted to share 3 of my favorite summer salads. These are more of non-traditional salads in the fact that they don’t contain a bed of lettuce.
Now you might be wondering why I’m writing an article on summer salads. Well, if you remember from my post on the future of relmstyle, the goal is to become more of an online lifestyle destination (you can read here). So healthy living and eating are part of what I want to be sharing.
Now, these salads aren’t my recipes, so I will be linking you to the source of where I found them.
Three Summer Salads
White Bean Caprese Salad
This salad is from the New York Times Recipes. I love their food recipes. However, I usually have to add a few ingredients of my own to make them more flavorful. This salad is straightforward and only consists of about 6-7 items and takes only minutes to make.
- Cannellini Beans
- Cherry/Grape Tomatoes
- Mozzarella Balls (Ciliegine)
- Basil
- Olive oil, Balsamic, Pepper, and Salt
- Minced Garlic (my addition)
- Diced Shallots (another of addition)

Mediterranean Orzo Salad
I love a Mediterranean Orzo Salad because it’s so easy to make and can be for any meal. It’s also pretty incredible the next day. Now, I generally do a really easy version of this by tossing the pasta and veggies in with Greek dressing instead of making my own. However, there are so many fancier versions on Pinterest (here).
- Orzo Pasta
- Cherry/Grape Tomatoes
- Cucumber
- Kalamata Olives
- Castelvetrano Green Olives (my addition)
- Shallots or Red Onions
- Cucumbers
- Crumbled Feta
- Basil
- Greek Dressing (my quick and easy version)

Chickpea Avocado Salad
In my search for more vegan recipes, I ran across this incredible Chickpea Avocado salad from Mississippi Vegan. It’s a substitute for tuna, chicken, or egg salad. And trust me, it’s incredible. This salad does have a lot of ingredients and has a lot of prep, but it’s so worth it. I didn’t quite have everything on hand, but I made some great substitutes. I also chose not to add the almonds, as I’m not a huge nut fan. Whether served on toasted bread, a bed of lettuce, or as a side dish, this salad is an incredible meal.
- Chickpeas
- Nutritional Yeast (I had to look this one up here)
- Garlic
- Celery
- Onion Dill Pickles
- Castelvetrano Olives Shallots
- Parsley and Dill
- Whole Grain Mustard, Vegan Mayo, Red Wine Vinegar
- Avocado
- Cayenne

Closing Statement
